RECIPE | DINNER

We generally try to steer away from carbs at dinner time and stick to veggies and salads. So when we found this recipe on our favourite food blog Deliciously Ella we swooned, and when we tasted it we melted!



This recipe is amazing because it looks and tastes like we're eating pasta but in fact we are eating  courgettes! This is definitely a meal we'll be making again!

Serves 2:

For the pasta:

- 2 courgettes

For the sauce:

- 1 ½ avocados
- a large handful of fresh mint leaves
- 12 brazil nuts
- ½ a cup of water
- 2 tablespoons of olive oil
- ½ a lime
- salt to taste
- a dozen chestnut mushrooms
